Moussaka

Ingredients:

1 lb lean ground beef
2 medium eggplants peeled
2 onions chopped
4 tbsp. garlic minced
8 oz tomato sauce
1 tsp. dry oregano

Cheese sauce
3 tbsp. butter
1 cup milk
2 tablespoons flour
2/3 cup grated parmesan cheese (can use more)
1 egg

Instructions:

Preheat the oven 350 F. Grease a 9 x 9-inch baking pan.
Peel the eggplants and slice 1/4-inch thick Brush a cookie sheet with some olive oil.
Coat the sliced eggplant with olive oil on each side. Add salt and pepper to taste
Brush a cookie sheet with olive oil and place the sliced eggplants on it
Broil under the broiler until brown then turn the eggplant on the other side and broil again until brown
Layer half of the eggplant slices in the baking dish you prepared before
In a large pan, combine onions and beef
Cook stirring until the beef is no longer pink and the onions are soft
Add I the oregano, tomato sauce, garlic and salt and pepper to taste
Pour the mixture over the layer of eggplant slices in the baking dish
Add the remaining eggplant slices over the meat mixture.
Now you have to prepare the cheese sauce
In a saucepan over medium heat melt the butter
Whisk in flour all at once, the salt and the pepper
Then gradually stir in milk and cook until thick and bubbly
In a small bowl beat egg and add to the cheese sauce
Mix well and add parmesan cheese and stir again.
Pour the cheese sauce over the eggplants in the baking dish.

Bake in a preheated 350 degree F oven for 45 minutes
