French Onion Soup

Ingredients:

4 large onions sliced
1 clove of garlic
50 g butter
1 tbsp. oil
3 tbsp. flour
25 cl of white wine
1 l water
Salt and pepper to taste
4 slices of bread
200 g emmental grated

Instructions:

In a saucepan melt the butter and the oil.
Add the onion and the garlic and cook for 20 minutes until onions are really tender and caramelized.
Pour the wine, bring to a boil then reduce the heat and simmer until the wine has evaporated.
Reduce the heat to low heat, sprinkle with flour mixture and cook for 5 more minutes.
Then add the warm water and season with salt and pepper.
Cover and cook gently for 10 minutes more.
In 4 small ovenproof individual bowls place a bread slice and sprinkle some cheese.
Place in the broiler until the cheese is golden brown and then pour the soup over.

Sprinkle again with cheese and broil again.
